Chocolate Cookie Recipe:

Ingredients:

– 1 cup softened unsalted butter

– 1 1/2 cups sugar

– 2 eggs

– 1 tsp Vanilla

– 1 tsp Kosher salt

– 1 tsp espresso powder

– 3/4 tsp baking powder

– 2/3 cup dark cocoa powder

– 3 cups all purpose flour

Cream together the butter and sugar until fluffy. Add the vanilla and eggs and mix until combined. In a separate bowl, combine the dry ingredients and then slowly mix the dry ingredients into the wet ingredients. Mix until no flour shows and the dough comes together. Place dough between two sheets of waxed paper and roll out to 1/4 inch thickness. Allow the dough to chill in the fridge for at least one hour. After chilling, cut out the cookies and bake on a cookie sheet at 375 degrees for 8-10 minutes.
